Baked Potato Soup

I made this Baked Potato Soup for dinner tonight, it's not only a healthier version but it's

Baked Potato Soup
Gina's Weight Watcher Recipes
Servings: 5 • Size: 1 cup • Old Points: 4 pts • Points+: 5 pts
Calories: 207.6 • Fat: 7.8 g • Carb: 22.5 g • Fiber: 2.4 g • Protein: 11.9 g

2 russet potatoes, washed and dried
1 small head of cauliflower, stem removed cut into florets
1 1/2 cups fat free chicken broth
1 1/2 cups 1% reduced-fat milk
salt and freshly cracked black pepper
1/2 cup light sour cream
10 tbsp reduced-fat shredded sharp cheddar cheese
6 tbsp chopped chives, divided
3 slices bacon, cooked and crumbled (you can use turkey bacon if you prefer)
Pierce potatoes with a fork; microwave on high for 5 minutes turn over and microwave another 3 - 5 minutes, until tender. Or if you prefer to use your oven, bake at 400° for 1 hour or until tender. Cool. Peel potatoes.
Meanwhile, steam cauliflower with water in a large covered pot until tender. Drain and return to pot. On medium heat, add chicken broth, milk, potatoes and bring to a boil. Use an immersion blender to puree until smooth. Add sour cream, half the chives, salt and pepper and cook on low another 5-10 minutes, stirring occasionally.
Remove from heat. Ladle 1 cup soup into each bowl. Top each serving with 2 tbsp cheese, remaining chives, and bacon.

Resolutions 2012 Oh Yeah!

So once again its that time of year to make those RESOLUTIONS, and as I sit here thinking about what I should TRY to promise to Resolute to, I decide to look at my post for 2011's Resolutions to see if I had followed through on those Resolutions, and guess what, I DID!!WOOHOO that's a first for me,LOL
Now before you congratulate me here is what I blogged to promise to do last year:
"This year I didn't make any of my same o'l resolutions I usually make and fail to accomplish,such as lose weight,not drink beer,blah blah,etc.etc.
Instead I am just going to just be me, have lots of fun,enjoy life and laugh even more this year!"
So now you know why I completed my Resolutions and guess what? My Resolutions are going to be the same again for me this year since I did such a swell job last year!!
For 2012 I resolve to just be me,have lots of fun,enjoy life and laugh even more this year!!
okay, okay, I will add one more to my list, one word that I am going to use all year long and that is ORGANIZE, that's it, I am not going to say what,when, where, or how, just ORGANIZE! wish me luck and LOTS OF LUCK to you on yours!

Nutcracker Obsessed?

I'm obsessed with Nutcrackers,at least that's what the husband says,I think NOT because if I really was OBSESSED I would have a lot more and I have NEVER paid full price for any of them,even my tallest one,the "butler" nutcracker, which is 43"tall-cost me about 30 buckaroos(retail 199.00)
My "obsession" started when the hubby and I went to a Christmas party at one of his friends house up on Spyglass hill,beautiful home overlooking the entire city, and the homeowner had Nutcrackers EVERYWHERE!huge ones OMG!I could never compete with her collection(maybe one day,if I were rich ;)
OBSESSED humm maybe just a little...
here is my collection:
I prefer the original looking Nutcrackers,the soldiers,but have picked up a ballerina,snowman,Santa,pirate,marine,army,police,rocker,angel,grandma,Frankenstein,golfer,turkey,StPattys,bunny,monkey,a even a pig, all the way to the right behind the penguin.Girls are harder to find and I'm looking for more to add to my collection,so if you see any.....Just don't tell the husband,LOL

Too Much Bad Stuff at a Good Time!

Anyone else feel the over indulgence from all the celebrating of the holiday season?
 I sure as heck do! I managed to GAIN 4 pounds this Holiday season-from Turkey day til today-I weighed myself for myfitnesspal site and was shocked to find I gained weight,okay NOT really shocked, just not HAPPY to SEE the results from all the BAD stuff I ate and DRANK,yes I do know its all MY fault, so back on track AGAIN I go-myfitnesspal is a pretty good site,tracking food,water consumption,exercise and WEIGHT- STICKING to it is one of my Resolutions.
